An Interview with Thy Tran, Asian Culinary Educator

We briefly caught up with culinary writer & instructor, Thy Tran, and chatted about her...

We briefly caught up with culinary writer & instructor, Thy Tran, and chatted about her upcoming series of cooking classes in OACC’s kitchen. As someone who’s worked in the food industry for the last 18 years, including restaurants, cookbook publishing and culinary academies--Thy has a special philosophy about learning in the kitchen that shapes her teaching style.

What’s your favorite part about teaching home cooks?
Definitely seeing that “a-ha!” moment in students. At its best, it’s a full-body experience involving all the senses, when they understand not only the rationale behind a new technique but also appreciate the flavor and texture and transformation of food. When get their hands literally around a new ingredient or connect meaningfully with others in the kitchen or at the table later. Sometimes, it’s simply making a dish that they’ve eaten but never cooked. One of my favorite times was watching a woman finally forming, after several tries, a dumpling that her father had made when she was little but had never taught her. Even through her frustration with mastering the rolling and shaping, there was this excitement in her eyes as the cooking connected with the memories.

How did you decide on these topics? Like flatbreads--that isn’t something we usually associate with Asian food.
I think it’s important to remind people about the incredible diversity of Asian cuisines and the forces that shaped them, like the difference between Southern Chinese and Northern Chinese food based on history and climate and culture. I also believe there are fundamental techniques to learn that can be applied across a multitude of flavor profiles. The ingredients in basic dishes, especially the science involved, help people incorporate new techniques into their day-to-day cooking. Something as simple as understanding the behavior of wheat flour under different types of liquid and heat helps cooks appreciate a wide variety of dishes.

You also don’t seem to focus on one cuisine. Each class combines the food of different countries. Is there a specific reason you decided to arrange the menus that way?
Well, I could make a political argument that most of these foods predate national boundaries. But a more practical reason is just that I think it’s much more important to show the commonalities between how people cook and eat than divide their culture into distinct categories or columns. Like we could ever really say, without ignoring the rich and complex history of our foods, that this dish is Chinese and that one Japanese and that other one Korean.

If you could take only one kitchen tool with you to a desert island, what would that be?
Oh, that’s a hard one. It’d be a toss-up between my meat cleaver and my cast-iron skillet. I’d probably try to sneak in both.
--End of interview.
Thy Tran will be conducting her Asian culinary workshop series - Cooking with the Senses: Fundamentals of Asian Cooking - from May 5 to June 16, 2012. Register for one or more workshops, or the entire series today!
<link http://cookingwithsenses.eventbrite.com/ _blank>http://cookingwithsenses.eventbrite.com/

December 2011Dearest Friend and Supporter of OACC: Happy Holidays! Thank you for supporting OACC...

December 2011

Dearest Friend and Supporter of OACC:

Happy Holidays! Thank you for supporting OACC and participating in our programs over the last year. Thanks to your support and commitment to the Oakland Asian Cultural Center, we have continued providing a home and space for hundreds of local groups, artists and communities that otherwise would not have a place and the resources to celebrate their traditional and contemporary pan-Asian and Pacific Islander American arts and culture. Though we have had our ups and downs this year due to the current economic situation, our staff, board, artists, participants and the communities have come together to ensure that OACC's doors remain open and that we can continue offering programs to the community.

Thanks in part to the incredible popularity and demand for our programs and services, our facility in the heart of Oakland's Chinatown in Pacific Renaissance Plaza (our home since 1996), has absorbed a lot of use and wear and tear. Now, after almost 16 years of dedicated use by the community, our space is starting to show its age and wrinkles. Though we have done our best to address many of these expenses while continuing to maintain our programs and services, due to cuts from foundation, government, and corporate supporters, our financial resources have been unable to cover the many items including the replacement and maintenance of our air conditioning / heating unit, refinishing the floors in our beautiful Edward W. & Yuri H. Chin Auditorium, and the refinishing of our stage.

As 2011 draws to an end our goal is to raise $30,000 to help cover the costs of repairing and maintaining key components of our facility.

Ultimately these funds will ensure that OACC's facility can be maintained and continued to be used by you and the thousands of other community members who participate in our programs each year. If you haven't donated already, please consider making a tax-deductible contribution to OACC before December 31st. With your support, we can continue preserving and celebrating APIA arts and heritage for current participants and future generations of artists, community leaders and alike!

Use the enclosed response envelope or donate safely & securely via
to invest in APIA arts and culture before December 31st. Donations can also be mailed to OACC at 388 Ninth Street, Suite 290, Oakland, CA 94607.

In community spirit,

Mona Shah
Executive Director

introducing movie nights in oacc's lobby!

Oakland Asian Cultural Center (OACC) has teamed up with curator and community organizer Jackie Im of
to bring you monthly movie nights in OACC's front lobby!
Movie night will kick-off on Tuesday, November 15, 2011 at 7:00pm with a screening of Uncle Boonmee Who Can Recall His Past Lives (ลุงบุญมีระลึกชาติ) by Thai filmmaker Apichatpong Weerasethakul. Winner of the Palme d’Or at the 2010 Cannes Film Festival, the film centers on the last days of the life of the titular Uncle Boonmee. With his loved ones - including the ghost of his dead wife and his lost son who has returned in non-human form - Boonmee explores his past lives as he contemplates the reasons for his illness. A.O. Scott of the New York Times stated in his review:

"Those who insist on a linear narrative or an easily identifiable set of themes may find themselves puzzled, perhaps to the point of frustration. But it hard to see how this movie, with its contemplative mood and genial, curious spirit, could make anybody angry. On the contrary: encountered in an appropriately exploratory frame of mind, it can produce something close to bliss."

The film will be introduced by Dena Beard, Curatorial Assistant at the University of California, Berkeley Art Museum and Pacific Film Archive. She managed the MATRIX projects of Desirée Holman and Silke Otto-Knapp and has worked on exhibitions with Tomas Saraceno, Trevor Paglen, Martha Colburn, Tris Vonna-Michelll, Ahmet Ogut, Omer Fast, and Emily Roysdon, and others. Independently, she curates projects such as the Lending Library exhibition series and Taking Up Room on the Floor for Bay Area galleries and alternative spaces.
